Ingredients
3 1/2 oz. boneless/skinless turkey breast
1/2 clove garlic
3 medium carrots
1 small onion
1 large potato (6-8 oz.)
1/4 tsp. Italian seasoning
1/4 tsp. black pepper
1 Tbsp. fresh cilantro (coriander)
1 1/2 cups vegetable broth
2/3 tbsp. olive oil
Directions
1. Rinse and pat dry turkey breast. On a separate cutting board, cut turkey into bite-sized cubes, set aside.
2. Scrub potato and carrots; rinse all other vegetables and cilantro. Cut vegetables into bite-sized pieces; chop cilantro and mince garlic, set aside.
3. In a medium nonstick saucepan heat oil over medium heat; saute garlic for one to two minutes, add turkey and lightly brown, about three to five minutes more. Add the chopped vegetables, broth and enough water to just cover; bring to a boil. Add spices and cilantro; cover, reduce heat and simmer for about 15 minutes, or until potatoes are tender. Serve.
